This past weekend I promised Thompson that I would make him a fun treat. He had been home from school with strep throat earlier in the week, and I thought he would enjoy an exciting dessert. I hadn’t made these milkshakes in awhile, and I knew they would be the perfect surprise for him.
He has been really into riddles lately, so he wanted me to give him clues about the treat rather than telling him what it was. I told him, “it has something that is cold in it and something that is usually warm in it and you drink it!”. He guessed that is was a milkshake, but couldn’t figure out what you would put in a milkshake that would be warm.
Toasted marshmallows. That was the answer, and should be the answer whenever you wonder what to add to your milkshakes. It’s not like milkshakes need anything else to make them more delicious, but throw in some toasted gooey goodness and they become even more indulgent.
Thompson loved helping me make these, and was amazed that we could toast up marshmallows without a campfire. The hardest part for me was stopping him from sneaking the toasted marshmallows as they cooled and the hardest part for him was waiting to actually be able to try some. We drank them outside since the weather was nice. If these were healthier, we would probably be drinking them all spring and summer long.
- 8 large marshmallows
- 3 large scoops vanilla ice cream
- ½ cup of milk
- ¼ teaspoon vanilla extract
- Place marshmallows on a baking sheet covered with parchment. Turn on broiler and place in oven, cooking marshmallows for about 2-3 minutes until browned and toasted. Remove from oven and cool slightly.
- In a blender mix together ice cream, milk, vanilla extract and toasted marshmallows. Save one or two toasted marshmallows to top the milkshake(s). Blend well. Add more milk or ice cream if needed to adjust the thickness of the shake. Pour into glasses and top with toasted marshmallows. Serve immediately.
