When we visited Amsterdam last year, there was a little bakery by our Air BNB that we would buy pastries from every day. We didn’t intend to visit the bakery quite so much, but each morning we found ourselves craving another ham and cheese croissant.
A classic ham and cheese croissant was my inspiration for this sandwich, but this version adds some extras (bacon jam!) and starts with pre-made croissants to make them extra easy. They are perfect to make for a crowd since you can assemble and toast a big batch. Also, this method of toasted croissant sandwiches can also be adapted to other sandwich combos.

Serves: 12
Ingredients
- 12 cooked fresh croissants (store-bought or homemade)
- 24 slices black forest ham
- 12 large slices manchego cheese (about 12 ounces total)
- 1 small container baby spinach
- Bacon jam
Instructions
- Preheat oven to 450 degrees F. Slice croissants horizontally to form two sandwich halves. Line up sandwiches on a work surface for easy assembly. On each bottom half, layer two slices of ham and a slice of manchego cheese. Add a generous spoonful (about 1.5-2 tablespoons) of bacon jam and spread evenly. Top bacon jam with a small handful of spinach leaves. Top sandwiches with the other half of the croissants and arrange on a baking sheet.
- Bake sandwiches in preheated oven for about 10 minutes, until spinach is wilted, croissant is toasted, and cheese is melted.
