We’ve had a hard time letting go of summer this year. For some reason it just felt way too fast. As school has started and the weather has slowly began to change though, we’ve been baking more and more.
One of our favorite things to bake around this time of year is this torte. We adapted it many times and in many different ways, originally making a Spiced Plum version. It is just so easy, and just so good. As you place the strawberries on top, you might wonder how exactly the cake is going to turn out, but one you pull it out of the oven, you have a perfectly risen torte filled with jammy strawberries.
Strawberry Torte

Ingredients
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 eggs
- 2 teaspoons vanilla
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 pound strawberries, hulled
- 2 tablespoons brown sugar
Instructions
- Preheat oven to 350 degrees F. Spray a 9 or 10 inch springform pan with cooking spray.
- In a large bowl, cream together the sugar and butter until smooth and pale, about 3-4 minutes. Beat in eggs and vanilla until well combined. Add flour, baking powder, and salt. Mix until just combined.
- Spoon batter into prepared pan, spreading evenly. Arrange strawberries, hulled side down, over top of batter, fitting as many as you can in a single layer. Sprinkle top of torte with brown sugar.
- Bake in preheated oven for 50-60 minutes cooked through completely and top is golden brown. Remove and let cool before serving.
