Roasted veggies are a mainstay of our family meals. The recipe is basically this: cut up pretty much any vegetable/s, drizzle with olive oil, sprinkle with salt, pepper, and +/- some flavor additions.
Throw them in the oven to cook while you make the rest of the meal. At our table, bonus points are added by your son if the cauliflower happens to be his favorite color.
Roasted Green Cauliflower and Purple Potatoes
Ingredients
- 1 head green cauliflower
- 4 medium sized purple potatoes
- Olive oil
- Salt and pepper, to taste
- 2-3 tablespoons finely grated Pecorino-Romano
Instructions
- Preheat oven to 450 degrees F. Cut up cauliflower into bite sized pieces. Chop potatoes into small chunks. Place on a baking sheet, and drizzle with olive oil. Sprinkle with salt and pepper and gently toss to mix.
- Bake for about 25 minutes, until the vegetables are tender and beginning to slightly crisp on the outside. Sprinkle with the cheese, and return to the oven for a minute or so until melted.
