Grilling has to be one of my favorite methods of making asparagus. It adds the best smokey flavor that complements the vegetable so well. Put them on skewer, then add some tender potatoes and bacon to the mix, and you have yourself the perfect side dish or appetizer.
Potato, Asparagus, & Bacon Skewers

Serves: 8 skewers
Ingredients
- 2 pounds mixed baby potatoes
- Salt and freshly ground pepper
- 1 bunch asparagus, stems trimmed and cut into 1-2 inch pieces
- Olive oil
- 1 pound bacon, cut into 1-2 inch pieces
Instructions
- If using wooden skewers, place them in cold water to soak for about 30 minutes prior to grilling
- Bring a large pot of salted water to a boil of medium high heat. Add baby potatoes and cook for about 8-10 minutes, until potatoes are softened but not quite cooked. Drain and allow to cool until able to handle.
- Preheat grill to a medium to medium high heat. Add asparagus to cooked potatoes. Drizzle with 1-2 tablespoons olive oil to lightly coat. Season with salt and pepper, to taste.
- Thread a potato, a few pieces of asparagus, and a few pieces of bacon onto the skewers, then continue to fill up skewers, alternating between these ingredients.
- Cook skewers on preheated grill, flipping once, about 10 minutes, until bacon is cooked through and vegetables are tender.
