Lace cookies are an easy but impressive cookie recipe for your holiday treat baking. Both rich and delicate, these cookies not only can be prepped quickly, but also bake up fast so you can make large quantities in just a short time (perfect for gift giving). Make sure to leave plenty of room between cookie when scooping the dough–they will spread substantially. This recipe makes a lot of cookies, but don’t be afraid to make plenty, as they somehow seem disappear too easily after making them.
Oatmeal Pecan Lace Cookies
Serves: 4-5 Dozen
Ingredients
- 1 cup butter
- 2¼ cups light brown sugar, packed
- 1¾ cups rolled oats
- ⅔ cups pecans, finely chopped
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 egg, slightly beaten
- 1 teaspoon vanilla
Instructions
- Preheat oven to 375º F. Line a baking sheet with parchment paper.
- In a medium sauce pan, heat butter and brown sugar over medium heat, stirring, until mixture is melted and smooth. Remove from heat. Stir in oats, pecans, flour, and salt, stirring until combined. Stir in egg and vanilla until combined.
- Spoon cookie batter by the teaspoon onto prepared baking sheets, leaving about 2 inches between each cookie (they will spread quite a bit).
- Bake for 5 -7 minutes, until golden brown, being careful not to burn.
- Allow to cool on the cookie sheet until firm enough to transfer, then remove onto cooling rack and cool completely.
- Store in an airtight container.
