Cooking turkey doesn’t have to be a big ordeal, and doesn’t have to be reserved just for Thanksgiving. We make this easy Instant Pot turkey breast on the weekends and then have sliced turkey for sandwiches the rest of the week. Be sure to allow time for resting to ensure the meat stays nice and juicy.

Serves: 8
Ingredients
- 1.5 cups chicken stock
- 2 small apples, quartered
- 2 small onions, quartered
- 3 large cloves garlic, peeled and smashed lightly
- Fresh or thawed bone in turkey breast, about 4-6 pounds
- 1 small bunch of thyme (about 6 stems)
- 1 small bunch of rosemary (about 4 stems)
- 2 tablespoons olive oil
- 1 tablespoons smoked paprika
- Salt and freshly ground black pepper
Instructions
- Add chicken stock to the Instant Pot. Place wire trivet inside Instant Pot. Add apples, onions, and garlic to Instant Pot then place turkey on top. Drizzle top of turkey with olive oil. Sprinkle paprika on top and season generously with salt and freshly ground black pepper. Add herbs on top of turkey.
- Close Instant Pot and set on high pressure for about 24-36 minutes (depending on size of turkey—you should set the timer for 6 minutes per pound). Once done, allow for a natural release, which will take about 10-15 minutes. Turkey should be cooked through and at 165 degrees F. Carefully open Instant Pot and remove turkey breast. Place on a cutting board, tent with foil, and let rest for about 10 minutes before carving. Drizzle meat with accumulated juices from the bottom of the instapot and serve. If keeping in the fridge for sandwiches or salads, store in a container with a small amount of juices to keep moist.
