Sometimes it is easy to get into a side dish rut, relying on the same plain roasted vegetables meal after meal. With just a handful of extra ingredients, you can elevate your dinner game with this creamy and cheesy baked cauliflower. The best part? It tastes indulgent, but has a few lighter ingredients to keep it on the healthier side.
Healthier Creamy Baked Cauliflower

Ingredients
- 1 head cauliflower, cut into florets
- 2 tablespoons plain greek yogurt
- 2 tablespoons olive oil mayo
- 2 teaspoons dijon mustard
- 1 teaspoon fresh thyme leaves, chopped
- Salt and freshly ground black pepper, to taste
- ⅓ cup shredded sharp cheddar cheese
Instructions
- Preheat oven to 400 degrees F.
- Bring about 1 inch of water to a boil in a medium saucepan large enough to fit a steamer basket. Place cauliflower in steamer basket and steam for about 3-5 minutes, until softened but still crisp and not yet completely cooked.
- Meanwhile, in a medium bowl, stir together yogurt, mayo, dijon, and thyme leaves. Season with salt and pepper, to taste (keep in mind cheese will also add some saltiness).
- Add steamed cauliflower to yogurt mixture, stirring to combine. Add to a baking dish and top with cheese. Bake in preheated oven for about 8-10 minutes, until cheese is melted and cauliflower is tender.
