Butter lettuce is one of my favorite lettuces to use in a salad. It is tender and mild, and always seems so light and refreshing. Pair it with some citrus and avocado, and it is the perfect salad for the beginning of spring.
Grapefruit, Blood Orange, Avocado, and Butter Lettuce Salad with Citrus Vinaigrette
Ingredients
- Citrus Dressing:
- Zest and juice of 1 small to medium sized orange
- 2 Tablespoons honey
- 3 Tablespoons champagne vinegar
- 6 Tablespoons olive oil
- Salt and freshly ground pepper, to taste
- Salad:
- 1 large head butter lettuce, washed and torn into pieces
- 1 large grapefruit, peeled and sliced
- 2 blood oranges, peeled and sliced
- 2 avocados, sliced
- Salt and freshly ground pepper
Instructions
- For the dressing: whisk together orange zest and juice, honey, and champagne vinegar. While whisking, stream in olive oil. Season with salt and pepper. Set aside.
- For the salad: In a large serving bowl, place a layer of butter lettuce. Season with a little salt and pepper. Top with some of the grapefruit, blood orange, and avocado slices. Add another layer of lettuce, and then continue layering. Dress right before serving.
