Chewy Berry & White Chocolate Cookies

Serves: 12-18 large cookies
Ingredients
- 1.5 cups sugar
- 1 stick (1/2 cup) unsalted butter, softened
- 1 egg
- 1½ teaspoons vanilla
- 1¾ cups flour
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- ¾ ounce mixed freeze dried berries, crushed or processed into a powder
- 1 cup white chocolate chips or chunks
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
- Cream together the sugar and butter until well combined and fluffy. Add egg and vanilla, beating until light and creamy. Add in flour, baking powder, salt, and freeze dried berries mixing until just combined.
- Use a large cookie scoop to form into dough balls and arrange on the prepared cookie sheet, leaving a few inches between dough balls. Bake in preheated oven for 9-14 until cookies are just set and barely starting to brown on the edges. Remove from oven and cool.
