I have actually never been a big fan of chip dips, but this is definitely the exception. It is perfect for entertaining or to take to parties when you are asked to bring a dish. It can be made ahead of time, and it is a breeze to throw together if you have some caramelized onions on hand in your fridge or freezer. Basically, this recipe takes the flavors of a classic french onion dip to a new level. Because when goat cheese is involved, you always know something especially delicious is going to be the result.
Caramelized Onion and Goat Cheese Dip
Serves: Makes about 2 cups of dip
Ingredients
- 1 large onion, sliced and caramelized (click here for instructions on caramelizing)
- 1 cup sour cream
- 4 ounces goat cheese
- 3 tablespoons chopped chives
- Salt and freshly ground pepper, to taste
- Chips or vegetables, for serving
Instructions
- Combine caramelized onions, sour cream, goat cheese, and chives in the bowl of a food processor. Process until ingredients are well combined. Season with salt and pepper to taste.
- Transfer the mixture to a serving bowl, cover, and refrigerate until chilled, about 1 hour. Serve with chips or vegetables.
