Everyone needs a go-to dessert recipe. You know, the one that you always have ingredients on hand for and can make without dirtying a sink full of dishes. The one you can make when you want to drop something off at a neighbors house or when your kids are asking to help make a treat. This is just that type of recipe. With these blondies, you get the combination of chewy and gooey you want from a really great chocolate chip cookie, but without having to scoop out and portion the dough. Instead, this cooks together in one pan, making this already quick recipe even easier.

Serves: 9-12
Ingredients
- 1 cup unsalted butter
- 2½ cups all purpose flour
- 1½ teaspoons baking powder
- 1 teaspoons kosher salt
- 1½ cups brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 1½ cups chocolate chips (dark chocolate, semi sweet, or milk, depending on your preference)
Instructions
- Preheat oven to 350 degrees F. Line a 8x10 or 9x9 inch pan with parchment paper or spray with nonstick cooking spray.
- In a medium saucepan, melt butter over medium heat. Continue to cook butter, stirring, until butter gets brown bits in it and smells nutty. This should take a few minutes. Remove from heat and transfer to a bowl to cool, making sure to get the browned bits at the bottom.
- Meanwhile, whisk together the flour, baking powder, and salt in a medium bowl.
- In a large mixing bowl, add brown sugar. Add cooled brown butter, stirring to combine. Add the eggs and vanilla, stirring to mix well. Add dry ingredients and stir until just combined, then stir in chocolate chips.
- Spoon the batter into the prepared pan, using a spoon or your hands to press down to form a single layer.
- Bake in preheated over for about 25-30 minutes, or until edges are golden and blondies appear set and baked on the top. Remove from oven and let cool before cutting and serving.
