Don’t get me wrong, I love a good sweet breakfast as much as anyone else. But when I just eat a sugar and carb heavy breakfast, I find myself regretting it later when I am dragging all the way to lunch time. That’s why I try to always have a little bit of whole grains and protein in the morning—which is where these waffles come in. A little bit of wheat pancake mix, eggs, and greek yogurt help balance out the sweet and tart cherry compote and decadent cocoa powder. They feel like we are eating one of our family’s favorite desserts without the instant food coma regret.

- Preheat waffle iron. In a mixing bowl, stir together cocoa pancake mix, cocoa powder, and salt. Add milk, greek yogurt, vanilla, and eggs and stir until just combined.
- Cook waffles according to waffle maker instructions. While waffles cook, add heavy cream and powdered sugar to a mixing bowl and beat until soft peak form.
- Top waffles with cherry compote and a dollop of whipped cream.
Notes
*You could sub a homemade or other store-bought waffle mix, but you may need to adjust the amount of liquid or mix slightly to get the desired consistency.
