I don’t know why, but I always seem to buy more avocados than we can eat before they go bad. I often find one lone avocado in the produce drawer that we forgot about or that I didn’t end up needing for a recipe. This avocado buttermilk dressing is my favorite solution to this problem. It’s creamy, but not too rich, and makes for a refreshing and versatile salad dressing or vegetable dip. Trust me, you will start buying extra avocados on purpose just so you can have a jar of this stuff on hand.
Avocado Buttermilk Dressing
Ingredients
- ¾ cup buttermilk
- ⅓ cup sour cream
- ⅓ cup greek yogurt
- 1 lime, juiced
- 1 medium sized avocado
- 3 tablespoons chopped chives
- Salt and pepper, to taste
Instructions
- Place buttermilk, sour cream, greek yogurt, and lime juice in the bowl of a food processor. Scoop out the flesh of the avocado and add to mixture, along with the chives. Process until smooth and creamy. Season generously with salt and pepper. Keep refrigerated.
