I love making quick breads because a.) they generally require a minimal amount of prep work and b.) they really are just cake, but since it is labeled as bread you can eat it as a snack. This applesauce oatmeal bread with maple glaze lives up to both of those qualities–especially the second one. I would gladly eat this all day and anytime of the day (and I may have done just that last time I made it). Moist and flavorful, this bread has become a fall staple in our house.
Applesauce Oatmeal Bread with Maple Glaze
Ingredients
- For the Bread:
- 2 cups all purpose flour
- 1 cup old fashioned oats
- ¼ teaspoon salt
- 2 teaspoons cinnamon
- ¼ teaspoon cloves
- ¼ teaspoon nutmeg
- 2 teaspoons baking powder
- 1 cup sugar
- ¾ cup vegetable oil
- 2 eggs beaten
- ½ cup plain Greek yogurt
- 1 cup plain applesauce
- 2 teaspoons vanilla
- For the Glaze:
- 1 cup powdered sugar (or more to thicken)
- ¼ cup maple syrup
Instructions
- Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan.
- In a large bowl, stir together flour, oats, salt, cinnamon, and baking powder. Set aside.
- In another bowl, stir together sugar, oil, eggs, yogurt, applesauce, and vanilla. Stir in dry ingredients by hand until just combined.
- Pour the batter into the loaf pan and bake for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven. Let cool slightly.
- While bread cools, whisk together the powdered sugar and maple syrup in a bowl. Add a little powdered sugar if it looks too thin. Pour over slightly cooled bread. Let cool completely, then serve.
