Whenever I think of steel cut oats, I can’t help but think of my dad. On Sundays, he makes a big batch to have each day for breakfast during the week. I wasn’t always in love with them, but I am now a big fan of their heartiness. With the fall chill starting to creep in and an overabundance of apples sitting on my countertop, I figured this would be the perfect way to spruce up a normally basic dish. Plus, I have discovered that it is never a bad idea to make a dessert into breakfast.
Apple Pie Steel Cut Oatmeal
Serves: Serves 4
Ingredients
- FOR THE OATS:
- 1 tablespoon butter
- 1 cup steel cut oats
- 3 cups water
- ¼-1/2 cup vanilla almond milk
- ½ cup chopped walnuts for serving (optional)
- FOR THE APPLES:
- 3 tablespoons butter
- 3 tablespoons brown sugar
- 4 small apples, peeled, cored, and sliced thin
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 2 tablespoons lemon juice
Instructions
- In a medium saucepan, melt 1 tablespoon butter over medium high heat. Add steel cut oats, and cook, stirring, until toasted, about 2 minutes. Add water and bring to a boil. Cover, and reduce heat to a low simmer. Cook, without stirring, for 25 minutes. Once done, remove from heat and stir in vanilla almond milk to desired consistency (more for a creamier, looser oatmeal).
- While oats cook, make apples. In a medium skillet over medium, melt 3 tablespoons butter and brown sugar. Once melted, add in apples, cinnamon, nutmeg, and lemon juice, stirring to combine. Cover skillet and cook, stirring occasionally, until apples are softened, about 10 minutes.
- Divide oatmeal into 4 bowls. Top evenly with apple mixture and walnuts, if using. Serve warm.
