Pastina is one of the coziest, quickest meals around. It is the perfect cold weather or sick day meal, especially because it is so easy to make. As a nutritional boost, this version utilizes protein packed cottage cheese and bone broth. A little lemon juice and zest brightens everything up and makes this just such a satisfying dish. I like the pastina to be a little brothy, so this is the perfect amount of liquid for our taste. If you like less broth, feel free to reduce the broth by ½ cup or so.
