I’m not sure exactly why we haven’t posted these before, since we make them pretty much every holiday season. They are so simple to make, especially since they are slice and bake so you don’t have the hassle of scooping dough or cutting out cookies. They are delicious on their own, but extra special and festive with this ruby chocolate drizzle.
Pistachio Slice and Bake Cookies

Serves: 3 dozen
Ingredients
- 1 cup (2 sticks) butter, softened and cubed
- ½ cup granulated sugar
- 2 tablespoons honey
- 1 large egg yolk
- 2 teaspoons vanilla
- 1¾ cup all purpose flour
- ½ teaspoon cardamon
- ½ teaspoon kosher salt
- 1 cup shelled pistachios
- 1 cup ruby chocolate chips
Instructions
- In the bowl of a food processor, add butter, sugar, honey, egg yolk, and vanilla. Process until light and creamy. Add flour, salt, cardamon, and pistachios. Pulse until combined; pistachios will be chopped in this process.
- Dump half of the dough onto a large piece of plastic wrap or parchment. Form into a uniform log, about 1.5 inches in diameter. Roll up parchment or plastic wrap around the log and twist ends to secure. Do the same with the remaining half of the dough, then place both logs in the freezer for about 30 minutes until dough is firm (or in the refrigerator for 1 hour or overnight, if desired).
- Remove dough from the freezer or fridge once chilled. Preheat oven to 325 degrees F, and line 2 baking sheets with parchment. Slice logs into rounds that are about ¼ inch thick. Arrange on prepared baking sheets. Bake in preheated oven until cooked and just starting to brown at edges, about 8-10 minutes. Remove from oven. Let cool for about 5 minutes, then transfer to a cooling rack and cool completely.
- Once cookies are cooled, prepare the ruby chocolate topping. Add ruby chocolate chips to a microwave safe container. Heat in microwave in 15-30 second intervals, stirring in between to prevent burning, until chocolate is melted and glossy. Drizzle cooled cookies with melted chocolate using a piping bag or spoon. Let chocolate set completely.
